Bozal Guías de Calabaza Sacrificio is a vegetarian Sacrificio mezcal made with 100% espadín agave. Rather than use chicken or other meat, Bozal here uses ingredients such as pumpkin stems, plantains, seasonal fruits and grains, and chepiche, a perennial herb used in Mexican cooking.
The components are suspended inside the still during the second and final distillation. The mezcal comes from Río de Ejutla in Oaxaca and is bottled at 94 proof.

Tasting Notes
"The nose is green and herbal, with cilantro and dill, along with orange peels and dried banana chips. The palate is multi-layered, with upfront vegetal notes of bell pepper, avocado, and parsley atop an underlying campfire smokiness, which surprisingly given it's vegan production, offers broiled meats. The finish is bright and peppery, with lemon pith and manadarins followed by wet stone, salted sunflower seeds, and cigar smoke."
