The 24th release in Buffalo Trace's Experimental Collection is a baijiu-style spirit, made from a base of sorghum and peas. The spirit was produced using what were essentially whiskey processes, and was matured for 11 years in three types of casks, including charred, toasted, and uncharred oak barrels.
The three components were then married together and bottled at 90 proof. .

BaijiuBaijiu (bye-joe) translates to "white spirits." Made in China although can be made elsewhere. Generally made from sorghum, rice, millet, or other grains. If aged, vessels such as clay, terracotta, stainless steel are used, not wood. Categorized as either Light Aroma, Rice Aroma, Strong Aroma, or Sauce Aroma.
Tasting Notes
"The nose offers cinnamon, wet, freshly-sod grass, mushy apples, and a bit of musty cardboard. The palate is somewhat thin and tight, with ginger chews, lemon pith, molasses, oak tannins, beef jerky, and towards the back, it gets a bit heady with some sharp alcohols. There's more richness on the finish, with bitter baker's chocolate and cacao nibs , allspice, and black pepper. Taste-wise it's more in the oddball whiskey family than the baijiu one, but it's certainly unique."
