Reviewed October 8, 2024Cachaça Aviador was a gold medalist in the twentieth Brazilian Wines and Spirits competition (2021) and voted best in the London Competitions (2022), in which it won a gold medal. They have been sugar cane producers since approximately 1850 in Serra da Ibiapaba in the state of Ceará, with pioneers in the production of artisanal organic cachaça and sustainability in production. The production of cachaça aviador is unique due to the combination of all the knowledge about the manufacturing process, which ranges from soil preparation to bottling, with the mild climate and favorable soil of Viçosa do Ceará. Furthermore, the raw material is grown organically and manually, which guarantees high quality in the final product. In April 2024, the Brazilian government, through the National Institute of Properties, granted the registration of Geographical Indication (GI), in the species Indication of Origin (IP), for Viçosa do Ceará, which is a production center for this cachaça . The region is now alongside the most famous in Brazil in the production of cachaças alongside Salinas in Minas Gerais, Paraty in Rio de Janeiro, Abaíra in Bahia, Morretes in Paraná and Luiz Alves in Santa Catarina.
