In the still, the entire cachaça manufacturing process is done by hand, with all the care and attention necessary to produce a quality distillate with a unique personality. When we talk about quality, we refer mainly to the right choice of the main raw material for cachaça: sugar cane. For this reason, the still has a nursery for seedlings and planting, as they believe that quality comes from the cradle. The sugarcane maturation process to obtain an ideal brix standard (sugar content) for fermentation, in addition to cultivation in favorable climatic and soil conditions, are factors that directly influence the final result of the cachaça. Cachaça do Anjo is aged for approximately one year and six months in barrels of balsam, amburana, American oak and European oak. This very high quality blend features integrated alcohol on the nose and an explosion of fruity and woody aromas with hints of caramel, almond, honey, vanilla and chocolate.
