Reviewed March 27, 2023 (edited March 29, 2023)Cachaça Senhor dos Passos is produced in Antônio dos Santos, district of Caeté, region of Serra da Piedade and Caminho Religioso da Estrada Real in the State of Minas Gerais, a Brazilian state famous for the production of quality artisanal cachaças. According to the producer, this cachaça is made using an artisanal process, with manual cane cutting, fermented in stainless steel vats and distilled in copper stills, using only the heart of the cachaça as the final product, with all equipment in copper and stainless steel, bringing strict quality control to the product, from grinding to bottling, making an extremely high quality cachaça. The history of the still began with the patriarch of the family, who for more than 28 years reconciled his profession as an executive in multinational companies with his passion for agriculture, always supported by his wife and matriarch. The passion was inherited by the children, who have always accompanied him on this journey, one of whom graduated in Agricultural Engineering to continue the legacy created by his father. The farm where the cachaça is produced was once exclusively for growing bananas, which is traditional in the region, but during a family gathering, on the terrace of the headquarters, enjoying a good cachaça, the idea arose to start a new production, this time from traditional genuinely Brazilian drink and the passion of the owners, thus initiating the planting of sugar cane, replacing bananas, for the production of this appreciated drink that meets a high quality standard, always seeking to improve the techniques to extract the best from the cane. Everyone involved took several courses and the agronomist is now the master still and technician in charge, bringing quality and modernity to our production. The name comes from an ancient and traditional ritual carried out more than 200 years ago in the Igreja Matriz de Nossa Senhora de Nazaré, the region where the still is located and our cachaça is manufactured. The ritual, allowed only for men, takes place on Ash Wednesday, when the cedar sculpture of Nosso Senhor dos Passos is removed from the altar and bathed in cachaça, the liquid being stored and shared among the faithful, which, according to them, brings grace and healing infirmities. Belief says that cachaça preserves the holy image and, as tradition says, prevents the wood from deteriorating over the years, but the fact is that this is the only sacred piece of the Matrix of Our Lady of Nazareth not yet attacked by insects. or destroyed by the action of time in these 200 years of tradition Notes: Pale yellow, limpid, aromatic, balanced alcohol and acidity, sweetness of sugar cane.
