The agave picked for Calle 23 is grown in the Highlands (Los Altos) of Jalisco, between the town of Tepatitlan and Arandas. It's double-distilled in stainless steel pot stills and completely unaged.
Note: the master distiller, Sophie Decobecq, one of the few women distillers in Mexico, is a former bio-chemist who previously worked in the South African spirits industry. .

Tequila BlancoDistilled from 100% blue Weber agave, it is typically unaged , clear, and bottled straight after distillation. Sometimes rested in stainless steel up to 60 days and can also be aged in wood for no more than 30 days.

"This is a very light, subtle and fresh blanco. It displays classic lime zest aromas and flavors which mix with the vegetal notes of the agave. It finishes clean and grassy and is very elegant in its simplicity and freshness."
