Copalli Barrel Rested Rum

Copalli Rum was launched in 2019 by marine conservationist Todd Robinson and Anya Fernald, CEO of restaurant and butcher shop chain Belcampo. An organic rum, it’s made on the grounds of the duo’s Copal Tree Lodge in Belize. The sugarcane used to make Copalli Barrel Rested Rum is sourced from the surrounding rainforest. It is then juiced, distilled twice in pot stills and aged in used bourbon barrels before being bottled at 44% ABV.
Aged RumRum that is aged, but no specific type or size barrel required. No set time required for length of aging, but will often carry an age statement (which should be taken with a grain of salt). Often thought of as "sipping rums".

"With a touch of cinnamon and leather on the nose, this golden-hued rum has a lovely amalgam of flavors on the palate. It exhibits notes of sweet leather, a mild dark fruit, and a slightly dry cinnamon spice."
