Based in Tennessee, Corsair is a distillery known for its renegade approach to making whiskey. One of Darek Bell's many experimental whiskeys is this one, which is made from both malted barley and red and white quinoa seeds (80% and 20% respectively.)

"Dare you to taste it without exclaiming the word "interesting" aloud. Very grassy with a thick, weighty, almost chalky texture that coats the palate. Nutty (cashews, almonds , walnuts) with pretty cinnamon and nutmeg spices and honeysuckle. The sweet and spicy notes are tempered with apricot and dry toasted barley. Very complex. Leaves the sipper guessing, possibly wanting more to figure out what's happening."
