The Dancing Pines Distillery is located in Loveland, Colorado. This small craft distillery uses a copper pot-still to create their products which in addition to rum include gin, whiskey, and liqueurs.
Using a slow fermentation process they distill their rums twice before aging them in charred oak barrels for an unspecified amount of time. The rum has an amber color in the bottle that lightens to a pale straw color in the glass.

Agitating the liquid creates a thin band around the glass that spins off surprisingly thick fast moving legs that evaporate quickly.

"The aroma of the rum begins with a light butterscotch note before delivering an undertone of vanilla, a spike of dried orange peel, honey and feint char. On the palate the rums enters with a light caramel note, honey, and the pop of dried orange peel found on the aroma. As the alcohol of the rum lights up the tongue you can detect faint baking spices and fruit notes. As the rum begins to fade there is a light medicinal note and mineral/char pop in a medium finish."
