Del Maguey Minero Santa Catarina Minas Mezcal

Florencio Carlos Sarmiento and his sons handcraft this mezcal in the village of Santa Catarina Minas. And when we say handcraft, we mean it. After the agave roasts in the ground, they are removed and crushed by hand using a large wooden mallets. After natural, wild fermentation, it is distilled in a clay pot still. This 100% espadín agave is bottled, unaged at 98 proof.
Mezcal JovenA spirit distilled from one or more different varieties of agave. Can only be produced in designated areas within 8 different Mexican states. Must be bottled in México. This is unaged or aged in stainless steel or plastic containers before bottling.
"The mezcal shows wet stones, a fair amount of smoke, and dark green vegetation. On the palate, there are high levels of minerals, clay, and more green herbal notes. The mezcal has a tangy quality to it and leads you to a finish which is dry; what lingers is smoke and an almost meaty flavor. "
