Mezcal Derrumbes Oaxaca
This is the debut expression for the brand. It is an ensamble style made from Espadín and Tobalá by a team led by mezcalero Javier Mateo in the town of Santiago Matatlán.
The agave is roasted in a pit, crushed by tahona, and wild fermented. It is distilled in a copper pot still and aged for 60 days in glass before bottling at 48% ABV.
