Dillon's Canadian Rye Whisky Batch 1
Dillon's // Ontario, Canada
Geoff Dillon went local for Dillon’s Small Batch Distillers’ first whisky release. The rye is made from a 100% Ontario Rye Grain mashbill of 10% malted rye and 90% unmalted rye. All of it grown just down the street from the distillery. The spirit was then aged in local Ontario oak barrels for 41 months producing a run of 1,107 bottles. The entire batch sold out quicker than Radiohead concert tickets but fear not, Batch 2 is on the way.
CanadianDISTILLED IN CANADA AND AGED IN BARRELS FOR AT LEAST THREE YEARS; OFTEN (BUT NOT ALWAYS) CANADIAN WHISKIES ARE BLENDS OF CORN, BARLEY, AND RYE WHISKIES WHICH WERE DISTILLED AND MATURED SEPARATELY. TRADITIONALLY, CANADIAN WHISKEY IS CALLED “RYE”, ALTHOUGH NO MINIMUM PERCENTAGE OF RYE-GRAIN WHISKY IS REQUIRED IN A BLEND.

"If this rye were a cat, you'd want to spend all nine lives with it. This beautiful rye deserves the classiest pickup line. A perfume of ripe peaches Febrezes the senses with wild grasses and burlap. The hot rye spices slap you for waxing pickup lines and a pleasantly bright mineral component punctuates the palate. The sweetness of the rye flashes out of the fire introducing a finish where the oak and delicate wood spices dry it out. If you didn’t score a bottle, this could be the one that got away."
