Back with Dobson's Distillery, the Empire 8 cask strength whisky is new and exciting. Triple-distilled in an Irish-style, the whisky then sits in stainless-steel with oak slabs for four months, before being matured in a shiraz cask for two years, a madeira cask for two years, and a chardonnay cask for two years.
Made with Baird's malt, supposedly the name comes from the number 8 being a lucky number in China. .

Tasting Notes
"A beginning of fudge, vanilla and caramel, Dobson's Empire 8 moves through to dark chocolate, rich cakes and flowers, with slight morning-dew covered grass and fresh hay influences, with a burnt orange-rind finishing the nose. Upon hitting the tongue, it explodes in the wine cabinet that is its strength, with backing vanilla sherry-influences. Ripe pear, banana, marzipan and aniseed characters all follow--an exciting combination. The finish is long on vanilla and a roasted malt quality becomes more prevalent as the finish goes on. "
