Don Gato Blanco

A complex Agave Spirit by NOM 1607 crafted with piñas that are slow cooked in traditional brick ovens, then crushed with a volcanic tahona stone. Distilled in both copper pots for warmth & column stills for balance before being bottled at 40%. It has an aromatic birth with notes of agave, fruits, nuts, herbs & spices; while a rich & complex life added notes of caramel, grapefruit, melon, grass, lemon peel, & pear, that led to an herbal death of medium length with notes of oak, pepper, almonds, clove & coriander.
