El Jolgorio Cuixe is distilled from the cuixe agave, which is harvested at 13 years of age. The agaves are pit-roasted, crushed by tahona, open fermented, and double-distilled by mezcalero Gregorio Martinez Jarquin in Santiago Matatlan, Oaxaca.
Mezcal JovenA spirit distilled from one or more different varieties of agave. Can only be produced in designated areas within 8 different Mexican states. Must be bottled in México. This is unaged or aged in stainless steel or plastic containers before bottling.
"The cuixe agave used to produce this mezcal grows for 13 years and is reportedly difficult to work with. The spirit in the bottle proves that the effort is worthwhile. It's luscious and complex, pairing its minerality with a taste that's surprisingly soft and sweet. It's an expensive mezcal, but worth every penny."
