La Face Cachée de la Pomme (translation: "the secret side of the apple") is a Quebec cidery founded in 1998 by François Pouliot, a young film producer whose dream was to create an apple ice wine. Winning 135 awards by 2015 for their flagship Neige Ice Cider, they released Gin de Neige, which is distilled from 100% Canadian grains.
The spirit is then infused and distilled with juniper berries, melilot, white spruce, and lichen. It's cut with apple water recovered from the production of ice cider and finally, a touch of the Neige Ice Cider itself is added to the gin.
