Tùsail [to-SAIL], is an old Gaelic word meaning "originary" to mean the source or origin of something. That something here is Maris Otter barley, a winter barley that is typically used in beer production. Dr. Bill Lumsden picked this type for this Private Edition bottling as the distillery had no record of ever using it before. Released in early 2015, this is the 6th edition of the Private Edition collection.
Single MaltDistilled in pot stills from 100% malted barley, produced at one distillery, aged in barrels; if Scotch or Irish, must be aged for at least three years.
"Sweet on the nose with a pinch of flowers, lemon creeps in the back of the nose. A deep and rich aroma of plums and apples with an undercurrent of honey and peaches soon follows. Thick toffee emerges next. The palate is sweet and thick with the fruits and flowers partnering up with cinnamon and ginger. The finish is flavors of cinnamon-spiced vanilla. "
