Reviewed January 16, 2025A dark rum by the Ingenio San Carlos Distillery in Herrara, Panama. Crafted from a proprietary sugar cane, harvested & transformed into grade-A molasses. The molasses undergoes fermentation with an in-house proprietary, locally grown yeast. 20th century American Copper & Brass Works copper stills distill the molasses into Rum. The result is then filtered through cellulose plates & then cold filtered. The Rums in the blend can range anywhere from 8 years of age & is blended to 90 proof. It is then aged in used American ex-Bourbon barrels, sourced from Kentucky. It has a rich birth with notes of toasty oak spices & vanilla; while a rich & oaky life adds notes of nutmeg, dried fruit, pepper & hints of bourbon & sugarcane; that led to a long, dry & delicate death. Reviewed June 4, 2021Definitely picked up a lot of character from the bourbon barrels. Bourbon, charred oak, heavy vanilla and brown sugar in the nose and across the palate. A dry rum which works well neat or in cocktails. -

Reviewed October 8, 2020Smells like a bourbon. Tastes like a bourbon. I like bourbon. They just have aged this in some very used bourbon barrels, as the bourbons flavors are very present. Caramel, oak, vanilla. The molasses flavor is actually in the background. Bit of brown spice spiciness that nicely lingers. It's barely a rum, but I like it. -

Reviewed September 24, 2020Amazing rum - lots of flavor, with a nice, smooth, Smokey depth from the bourbon barrels. Not as sweet as some other aged rums, which makes for a nice balance.
