An elegant, Agave Spirit by mezcalero Eleuterio García Martínez crafted with a blend of 70% Espadín & 30% Cuishe agaves, aged 7 and 12 years respectively in the community of San Dionisio Ocotopec, Oaxaca. The agaves are roasted in a pit oven for 4 days, milled by horse-drawn tahona, fermented with naturally occuring yeasts for 6 days, & distilled in copper stills before being bottled at 42% ABV. It has an aromatic birth with notes of roasted agave, earth, fruits, herbs & spices; while a rich & complex life adds notes of lime, lemon & butterscotch; that led to a smoky death of medium length with notes of pepper, cinnamon & earthy smoke.
