A medium dry, gluten & sulfite-free, vegan, small batch, artisanal, Sake by Toji (master brewer) Kimio Yonezawa for Akashi Sake Brewery in Akashi City, Hyogo prefecture, Japan made with local rice milled to 60% & pure water. It has an aromatic birth with hints of citrus, white flowers & grain; while a full life adds hints of bitter orange, lemon & citrus blossom; that leads to a delicate death of medium length with hints of earth & rice.
