Harvest Spirits holds New York's first farm-distillery license and is located on a 200-acre apple farm in the Upper Hudson Valley. This is truly a farm-to-glass spirit made only of apples coming from the third generation family farm.
Distilled two times in their 100-gallon copper pot still. Aged for 2 years in 50-gallon ex-bourbon casks (usually Woodford Reserve), which are used multiple times then finished in 15-gallons quarter-casks for additional color and barrel flavor.

If aged under two years in oak, it must state the word "immature" on the label. Beyond that, labels such as VS, VSOP, and XO mean little as the brands themselves dictate what that means to them.

"The light golden blonde color of this applejack more typical of an oaky chardonnay hints at the restraint used in barrel aging. Buttercream, pear, and light brown sugar waft out of the glass first followed by subtle notes of almond, pineapple, hazelnut and orange. More heat on the palate than the nose suggests while maintaining the expected luscious texture. The sweet aromatics give way to drier flavors of cinnamon, nutmeg, green apple and apple peels. Distinctly vanilla, cinnamon and hazelnut on the long, warm finish. Especially suited for hot toddies and mulled ciders also makes a great whiskey sour variation."
