Himbrimi Old Tom Gin is made at the Brunnur Distillery in Reykjavik, Iceland. It was originally developed by Icelandic artist and entrepreneur Óskar Ericsson as a sipping companion for his flyfishing trips along the eastern coastline of the Westfjords of Iceland.

The gin is made with Icelandic spring water along with organic juniper berries, wild angelica flowers, and wild Arctic thyme. After the botanicals are infused in a grain spirit, the gin is filtered and sweetened with organic honey.

The US launch begins in September 2022 starting with the New York market with others to follow later in the year.

    This style is not legally defined, but in general, this style of gin is mildly sweet and is not juniper-forward. It falls in between London Dry Gin and Genever in terms of sweetness level.
