J. Henry & Sons 5 Year Wisconsin Straight Bourbon Cask Strength
Bourbon
J. Henry & Sons // Wisconsin, USA
A project brought to life in order save the family farm, the J. Henry & Sons Cask Strength Bourbon is comprised of a mash bill of 60% Wisconsin Red Corn (developed by the University of Wisconsin in 1939) and the rest equal parts rye, wheat and barley.
The distillery is all farm-to-glass and the grains have been cultivated on their historic Henry Farm since 1946. Please note that, because this is being sold by the barrel, your best bet to tasting (until a retailer or bar commits) will be to go to their tasting room to taste.

Tasting Notes
"This cask-strength bourbon is a full-bodied and grain-forward drink. Tightly packed cloves give way to an almost walnut core, but over-arching cereal notes from the barley pull this bourbon closer to its Scottish cousins. On the palate this is rustic, but well-balanced with minimal alcohol heat even as it sits at 120 proof. One can feel the dedication to the craft in each sip. Definitely a stand-alone sipper, preferably neat. "
