J.P. Wiser's Double Still Rye
J.P. Wiser's // Ontario, Canada
Dr. Don Livermore, Master Blender at Hiram Walker, created this whisky as a nod to Wiser’s rye heritage using modern techniques. This Canadian whisky has two types of rye distillate. The first is distilled in a copper column-still and then is pot-distilled to concentrate rye flavor profiles. It’s then blended with a second rye that’s been traditionally distilled with a copper pot-still. The whiskies are aged four to nine years and bottled at 43.4% abv. For the moment, available only in Canada.
CanadianDISTILLED IN CANADA AND AGED IN BARRELS FOR AT LEAST THREE YEARS; OFTEN (BUT NOT ALWAYS) CANADIAN WHISKIES ARE BLENDS OF CORN, BARLEY, AND RYE WHISKIES WHICH WERE DISTILLED AND MATURED SEPARATELY. TRADITIONALLY, CANADIAN WHISKEY IS CALLED “RYE”, ALTHOUGH NO MINIMUM PERCENTAGE OF RYE-GRAIN WHISKY IS REQUIRED IN A BLEND.
"Butterscotch sauce is the first aroma to tickle your nose before toasted wood surges and draws you in for a taste. Floral honey and pickle brine detonate up front leaving the mouth tingling. A long spice bomb finish weaves honey in and out of a finger-licking-good rye spice with that oh-so-Canadian citrus pith. Slap a pair of hockey skates on this whisky, it’s ready and itching to get into the game."
