Koval Single Barrel Bourbon is produced by Koval Distillery, a grain-to-bottle distillery founded in 2008. It is made from a mash bill of 51% organic corn and 49% organic millet, with grains sourced from Midwest farms.
The bourbon is distilled using a heart-cut process and aged in new, charred 30-gallon American oak barrels. Bottled at 94 proof, each release is a true single barrel expression, resulting in slight variation from bottle to bottle.

Tasting Notes
"Sweet vanilla notes are found along with some light char smoke and toasted grains. Not sure you would know that millet was used as the secondary grain, but you know that it isn't rye or barley. The mid-palate is soft and sweet and with finish focusing on barrel spices and char smoke."
