The Cognac Foeder finish begins as the distillery's Four Grain Straight Bourbon, made from a mashbill of 60% corn, 20% wheat, 10% rye, and 10% malted barley.

The Cognac Foeder finish begins as the distillery's Four Grain Straight Bourbon, made from a mashbill of 60% corn, 20% wheat, 10% rye, and 10% malted barley. After an initial maturation in full-size, new charred oak casks, the whiskey is finished in French oak casks of different sizes, before being married together in a large Cognac foeder.

Tasting Notes
"The nose is rich, offering macerated grapes and aged brandy, as well as salted caramel, roasted peanuts, and musty oak. The palate is dry and a bit tight, with blackberries and lingonberries, violets, cocoa powder, vanilla bean, and a saw dust and wood workshop characteristic. The finish offers leather, wood tannins, cellar, and bitter baker's chocolate."
