Starting in 2013, Lyon Distilling Co. a small startup distillery out of Maryland, has been using 26-gallon pot stills to make several different rums and ryes.
The most popular is their Dark Rum, an unaged rum that begins as a 50:50 mixture of blackstrap molasses and evaporated cane juice. After being distilled twice, it’s colored with a batch of spirit caramel whipped up for each production run.

Dark RumAKA Black Rum. Usually aged (but not always) and has additional caramel-coloring added to provide the dark/black color. Some are distilled from blackstrap molasses. No specific type or size barrel required for aging nor is there a set time required for aging in most countries with a few exceptions.

"Despite the dark rum name, its coloring is a pleasing dark amber. The nose gives hints of molasses and raisin. Sipping it yields brown butter and sweet burnt caramel – just slightly bitter but not unpleasant. There’s no noticeable agricole notes despite half the mash being evaporated cane juice. There’s also no initial burn despite being 90 proof. The mouthfeel is slightly more viscous than the average rum. Then finish fades quickly, then sneaks back in with a subtle reprise of caramel. A solid, albeit not inexpensive choice for cocktails calling for dark rum."
