Colombian rum likely isn’t well known to the casual consumer, but brands like Dicatador are highly regarded in the rum world. Chicago-based Parce (slang for “good friend” in Colombia) is a new U.S.-based private-label brand bottling of existing aged rum from Colombia to create eight- and twelve-year expressions. The Parce 12 is a blend of rums with a minimum of twelve years in ex-bourbon casks.
Aged RumRum that is aged, but no specific type or size barrel required. No set time required for length of aging, but will often carry an age statement (which should be taken with a grain of salt). Often thought of as "sipping rums".
"The Parce 12 Year shows just a slightly darker color in the glass compared to its eight-year sibling. The nose is more subtle than the Parce 8, but is ultimately more intriguing, combining vanilla and leather to invite you to sip sooner rather than later. The initial entry shows lushness and complexity not present in its younger sibling. It has a mild sweetness with faint almond and cherry notes piping up behind the leather and vanilla. The mouthfeel is pleasing with little burn on the finish. "
