Reviewed May 9, 2023 (edited May 11, 2023)8/13/21. 55.95% ABV; 111.9 proof; Barrel 708 Nose: initially a salty buttery popcorn, some peat, salted caramel. Maybe a tiny hint of plum or dark fruits. Palate: initial hit is a mix of smoke, sweetness, and wood. Does have a solid viscosity. Peat comes out more as you sip, its a strong earthy note. Peat here, while strong, is a very different experience from islay peat. This is a distinctively stronger decomposition notes. Adding a decent amount of water tones down some of the harsher peat decay and brings out the barrel and malt notes more. Definitely get more caramel, toffee, and butterscotch here. And a tinge of something brighter, not quite a citrus but something mildly floral. Finish: woody and peat oily. Woodier once water is added -

Reviewed April 27, 2023 (edited April 28, 2023)This one is 8/13/21. 55.95% ABV; 111.9 proof; Barrel 708 Nose: ethanol, a bit phenolic, slight bit of caramel, a bit of peat. Getting a hint of Grass that's been sitting in the mower bag for a few hours. A tiny amount of floral if you search for it. Overall not a strong nose. John mentioned black cherry and I DEFINITELY get that. Palate: bourbon cask is prominent, peat and smoke are not overpowering but there, a decent amount of sweetness, some caramel, some cherry on the palate. Brown sugar.
