Mezcal Pierde Almas Coyote 2014
Pierde Almas is a self-styled "hyper-gourmet" and artisan-made "mezcal de autor". It is made principally from Oaxacan wild agaves in single-varietal batches. Piñas are baked up to five days in clay ovens, natural fermentation takes place in wooden vats, and the mash is distilled in a copper "serpentine" still.
Mezcal JovenA spirit distilled from one or more different varieties of agave. Can only be produced in designated areas within 8 different Mexican states. Must be bottled in México. This is unaged or aged in stainless steel or plastic containers before bottling.
"A sweet smokiness is the first impression, followed by a creamy quality that suggests a savory, peppery flan. There's vegetal heat on the palate, along with black pepper, burnt citrus peel and some earthy minerality. The finish lingers tantalizingly."
