Reviewed October 8, 2022 (edited January 13, 2024)Wow. Wow. Wow. Sometimes a whiskey comes along and makes you question the origins of life. A gentle swirl in a glencairin glass leaves a ring that just doesn’t want to fall down. On the nose: graham cracker, banana, then dark fruits, cherry, fig, raisin. Front pallet: licorice, not too sweet, slight baking spices like cinnamon and candy peanuts. Mid pallet brings in those dark fruits, chocolate cherries, pencil shavings, dill and pepper. Chordal cherries, orange marmalade, marshmallow? Some jammy fig, slight char on the exhale. Finish goes on and on, roller coaster of flavors again, fading in and out. Dry oak tannins, more dark fruit, slight rye pepper, but everything is so a balanced. A few drops of water brings out more of the rye spice, some candy bubble gum, chocolate pecans. Caramel and some cinnamon vanilla. A mayville masterpiece. Why cannot all whiskey taste like this? This brings up questions like 1) what does cask strength pappy taste like. 2) how does it taste when you mix a barrel Larue with GTS and 1/2 barrel of sazerac cask strength? 3) is OFC a honey barrel of GTS? 4) to name these barrels as this or that doesn’t happen until it’s bottled, what could these be but just simply amazing?
