Montelobos, meaning "mountain of wolves," is an unaged mezcal created by Dr. Iván Saldaña and produced by fifth-generation mezcalero Don Abel Lopez in Santiago Matatlán, Oaxaca. Made from organic Espadín agave sourced from Loma Larga, the agaves are roasted for 5 to 7 days in a volcanic stone pit, crushed by tahona, and naturally fermented before distillation.

"The nose is fairly straight-forward with abundant notes of smoked meats and brine. The palate is where things get more interesting; flavors of lemon zest, salt, grilled rosemary and ash are detected. Overall, this is an enjoyable mezcal and at this price point, one that is very suitable for a cocktail."
