Eight Bells Rum is a barrel-matured gold rum, distilled from Caribbean-sourced molasses in a direct-fire pot still. It is then aged for about two years in former bourbon whiskey barrels.
Gold RumRum that is often aged, but can also just have caramel-coloring added to provide color. No specific type or size barrel required. No set time required for aging for most countries with a few exceptions.
"There's actually a surprising funkiness and minerality on the nose of this rum that's rarely found in domestic products. On the palate, there's a crisp, young tang that mingles with some sweet vanilla and caramel. On the finish, there's nuts, cotton candy, and some musty spice. This rum is quite complex for its age, and with some additional aging, has potential to be something quite special. "
