Novo Fogo is a zero-waste distillery located right at the edge of the Atlantic Rainforest in the state of Paraná in southern Brazil. A few single-barrel expressions of their cachaça are released from time to time, sadly yielding very small quantities (in this case only 204 bottles) thanks to thirsty angels in the hot, tropical climate of the warehouse.
Novo Fogo is aged in 53-gallon barrels that once held Four Roses bourbon, sanded and re-toasted. Barrel 152 was aged 3 years.

CachaçaProduced in Brazil. Distilled from sugarcane juice. If aged, at least 50% of product must be at least 1 year old. The types of barrels used are not specified, but often utilize Brazilian wood. Up to 6 grams of sugar per liter may be added.

Tasting Notes
"This tart, toasty and fruity cachaça shows a lot of poise. Bright, ripe mango, papaya, peach, pineapple, lemon and banana are set off by herbal notes of pine, jasmine tea, and mint. Some sesame, walnut, almond, and rich toffee taste as though sparked by a flaming orange peel. Very fun to sip, with a dry, only slightly hot finish. "
