Built on Spike’s farm inside the Ord River Valley in Kununurra, Hoochery Distillery is a small pot distillery, and the oldest distillery in Western Australia. The distillery uses local sugar cane, water and yeast to make their Ord River Overproof Rum with a total distilling capacity of just over 50,000 bottles of rum each year.
The rum itself is charcoal-filtered, with maturation in barrel that will go on to mature Spike's Raymond B Whisky. This tasting was completed using a bottle from Vat 35, bottled on 07/23/2015.

Dark RumAKA Black Rum. Usually aged (but not always) and has additional caramel-coloring added to provide the dark/black color. Some are distilled from blackstrap molasses. No specific type or size barrel required for aging nor is there a set time required for aging in most countries with a few exceptions.

Tasting Notes
"A heavy, powerful nose, the Overproof has a smoky and heavy fruit appeal. Heavy-punching raw sugar with aniseed mingle with golden syrup and vanilla. Thick and smoky again on the palate, weak vanilla struggles against a tide of raw sugar; fruits and dark nutty chocolate that threatens to sweep it away. The palate warms then, becoming wooded and roasted with cherry tones and a plum edging that turns bittersweet as cocoa dust falls across the tongue. The finish is long, lasting through the night and pushing into the next morning, with dark nutted chocolate with cherry with vanilla dance progressively through an ever growing palate. "
