Osocalis is a brandy distillery located in Soquel located in Northern California, but the traditions and methods of distillation are French. Dan Farber, owner and master distiller, spent many years in France and other parts of the world studying and making brandy.
He began Osocalis in the early 1990's and exclusively produces brandies. A small, alembic still is used for distillation and in this bottling, over a dozen apples from the mountains of northern California are employed.

American BrandyProduced in the US, this is usually referring to brandy distilled from grape-based wine. If the producer uses other fruit, it must be stated on the label. If aged under two years in oak, it must state the word "immature" on the label. Beyond that, labels such as VS, VSOP, and XO mean little as the brands themselves dictate what that means to them.

"The apple aromas in Osocalis Apple Brandy are a nice mix of high and low notes and aren't static-- there's complexity and liveliness there. Walnuts, brown butter, and a sweet smoky quality are intertwined with the apple scents which are a mix of sweet and tart. On the palate, the brandy is soft and soothing. Brown sugar and vanilla come in to focus with wood spices helping to bring a close to the finish."
