This bottling is a blend of column and pot still rums from the Caribbean, the US, and Central America. The rums have been solera aged in American oak ex-bourbon barrels, port wine, and sherry casks. After blending, the rum is then further aged in ex-bourbon to finish aging.
A previous edition of this bottling was released at a lower proof, but this edition was bottled at 95 proof. Papa's Pilar is named in honor of Ernest "Papa" Hemingway and the brand was developed in conjunction with his estate with a portion of their profits going to charity. Papa's Pilar Bourbon Barrel Finished Dark Rum 95 Proof is a limited edition release of 2000 cases available beginning October 2018.

Dark RumAKA Black Rum. Usually aged (but not always) and has additional caramel-coloring added to provide the dark/black color. Some are distilled from blackstrap molasses. No specific type or size barrel required for aging nor is there a set time required for aging in most countries with a few exceptions.

Tasting Notes
"Butterscotch pops out immediately on the nose, with caramel, honey, and buttered popcorn. The palate showcases salted caramel, plenty more butterscotch, and pistachio shells, with that buttery-nuttiness interplay emerging as a theme. A moderate finish offers astringent, almost bitter oak, barrel char, and root beer, with a bit of chocolate and baking spice."
