Pendray's Distillery is the distilling arm of PasoPort Winery, a winery specializing in port-style wines in Templeton, California. This grappa is distilled from 100% zinfandel and aged in the winery's port barrels.
Grappa/MarcEau-de-vie that is distilled from the pomace (seeds, stems, skins) left over from winemaking. Typically only grapes are used, but other fruit is acceptable. Can be aged in wood. No specific length of time required.
"The aroma on this grappa is striking, with earthy notes of petrichor, soil, and a bit of florality in the background. The color is arresting too, with a reddish tawny hue contributed by the barrel. A tart nuttiness reminiscent of fino sherry comes out on the palate, along with sweet hints of apricot and stone fruit. The complexity of this grappa keeps one coming back for more."
