Red Soles Stillhouse California Brandy
Red Soles // California, USA
Red Soles Stillhouse operates within the Red Soles Winery in Paso Robles, California. They distill on a Holstein still from Germany that they call "Patience, My Dear." This five year old brandy is aged in new French oak with blackened heads.
American BrandyProduced in the US, this is usually referring to brandy distilled from grape-based wine. If the producer uses other fruit, it must be stated on the label. If aged under two years in oak, it must state the word "immature" on the label. Beyond that, labels such as VS, VSOP, and XO mean little as the brands themselves dictate what that means to them.

"The unique barrels used to age this brandy, blackened on the end caps, give it an unusual balance. It's golden in color and gently aged, but it has a very subtle smoky char that comes through on the finish. Up front it's soft with notes of chestnut, oak, a hint of vanilla, and a touch of tarragon. The wood complements the fruit without getting in the way of it, producing a light and bright spirit."
