Reviewed January 21, 2021 (edited April 7, 2022)Caramel, fruit, spice, honey, vanilla, oak, and some heat. Incredibly smooth, which is improved when mixed with the residual cab sauv from niagara left in the glass. -

Reviewed December 17, 2020Complex aromas of dark fruit, berry, vanilla, and baking spice lead to flavours of cherry, smoke, toffee and raisin. The finish is smooth with red currant and spice notes. Not as much finish as I was hoping, but spectacular when mixed with a dash of port or heavy red wine. -

Reviewed November 13, 2020 (edited December 22, 2020)Cab Sav 15 and the Pike Creek 21 year Oloroso tried side by side. The 15 has a sweeter nose, the 21 is nuttier and bit more dry. Which is better would depend on the drinker’s preference- both are good. I give a slight edge to the 15. The palette is creamier on the 15, balanced and fruity. Very nice. The 21 is a bit better, dry, spicy and delicious. The win goes to the 21 for the longer finish and better overall experience. Both are worth a buy. -

Reviewed September 7, 2020 (edited March 28, 2021)This is a beautiful dram! The first thing you notice is definitely the wine note on the nose, it is clear and defined, but not unbalanced. The red wine note is present but well integrated into the whole. It is elegant and round, balanced by pleasant caramel toffee sweetness. With time in the glass, this wine influence dissipates and the character of the grains + wood take centre stage. Once it reaches this stage it shows some family resemblance to Wiser's Legacy (which is always welcome in my books!) I expected it to be nearly all corn, but I'd venture a guess that there is some rye in the blend. It is a wonderful experience...another home run for Dr. Don!70.0 CAD per Bottle
