Privateer True American Amber Rum

Privateer uses a combination of grade "A" molasses and real boiled brown sugar (simmered pressed cane juice) for their Amber rum along with a proprietary yeast selected for this specific rum. It goes through a long fermentation process (six days) and is double-distilled. The first distillation is done in a pot-still and the second in a still with plates added. The final distillate is evaluated and based on its flavor will be selected to age in a new American oak barrel or a used bourbon or brandy barrel.
Once matured, the rum is then blended together and further aged from four to eight months in third and fourth use barrels. Soft water is added in stages throughout and at bottling, the rum is 90 proof. Gently filtered. No additives including sugar.
