This sotol is made from 100% Wheeleri that is harvested from the Chihuahuan desert in Durango at around 15 years of age. It is cooked in a volcanic rock pit oven that is fueled by mezquite for 3 days. It is then put through a mechanical shredder and naturally fermented without the use of cultivated yeast.
It is twice distilled in 350-liter copper pot stills. it is bottled at 45.5% ABV.

SotolDistilled from the Dasylirion wheeleri (aka desert spoon). Technically, sotol is not an agave. Must be distilled in the Mexican states of Coahuila, Chihuahua, or Durango.
Tasting Notes
"The nose is fresh, herbal and citrusy, with notes of fresh mint and dill, grapefruit peel, and smoked habanero pepper. Red bell pepper comes into the palate with spiced hot cocoa flavors (milk chocolate, chili pepper flakes, cinnamon). This medium-bodied sotol has a bright, lively finish with elements of sweet smoke.
