Reviewed April 15, 2024 (edited April 16, 2024)This is a rye whiskey distilled by me. Aged in smaller barrels, and depending on batch number could be 10G (early batches) or up to 30G (later batches). I used Barrel Mill char 3 barrels and an 85/15 rye to barley mashbill. It was fully understood (by me) and conveyed, in detail, that both the Red Saw rye and bourbon were young small barrel aged whiskies. As such, you don't achieve much esterification and "aging" on oak. Instead its more of an "infusion" of oak flavors over a shorter period of time. Less refined, less mature, and disjunct between whiskey and barrel flavors. An unfortunate necessary choice for a young distillery. The good news is that the same exact mashbill was aged in 53G barrels for the Grist and Saw Empire Rye along side the younger barrelings. Its the same whiskey just aged in 53G barrels for at least 2 years. A good comparison between small barrel aging and standard barrel aging. Batch 1 Tasting Notes: -Nose: grassy, spicy, hot ethanol, subdued oakiness -Mid Pallate: young rye pepper spice, green apple, ethanol -Finish: trailing finish with subtle oak and whitedog whiskey notes.
