Doing this (im)properly after a Guinness foreign extra stout. Happy feast day of Saint Patrick! Tiocfaidh ár lá, sláinte to a United Ireland and a free Palestine! 🇮🇪 🇵🇸
Nose: buttered toast/shortbread, a gentle sticky dried fruit augmented with a subtle blackberry? a nice warm and cozy baking spice, with an orange peel note that uniquely evokes Christmastide. A very slight French vanilla bean ice cream note with an overall mellowing oak.
Palate: rich, full, beautiful single pot still. Buttery, with noticeable yet not overpowering oloroso. Mildly tannic oak, clove and cinnamon as the foremost notable baking spice here. A nice element of fresh baked bread. Poached apple and pear with a dusting of cinnamon.
Finish: not particularly long but not short. Lingers with a warming sweetness of oak, vanilla, and baking spice
