Redwood Empire Pipe Dream Bourbon

Nose: cherry, caramel, dusty maple. Taste: A bit watery cherry, slight baking spices (cinnamon/nutmeg), ends with a nice numbing heat and some barrel wood. Solid but not mind blowing.

Apple

The spicy, fruity nose jumps out as I near the glass; cherry, cranberry, cinnamon, caramel, oak, apple, rye and fallen leaves with distant hints of vanilla, flowers and apple. Reminiscent in my mind of fall (not Houston “fall”, but real fall). Smooth on the palate with a little sweetness; cinnamon candy, charred oak, vanilla, apple and some cherry. Spicy and slightly bitter finish. It obviously isn’t old, but it isn’t thin or weak either.
