Dramatically lacking in sugars, but abundant in character and aromatics, ginger presents a very particular set of hurdles for the distiller not to mention a massive amount of raw of ginger. (It takes 88 pounds of ginger to produce one liter!) These obstacles juxtaposed with an irresistible set of potential rewards make this a compelling challenge for such a great distiller.
Eau-de-VieMost often referring to clear, unaged brandy distilled from wine from any type of fruit. Some styles are macerated with skins after distillation which provide color.
"This particular offering may catch even his most devout followers off guard. While not in the least bit lacking in complexity, this spirit is gravely unbalanced and acrid. The aroma ranges from notes of hide tanning solution, root beer, and wet plaster to ginger powder, orange peel, pickled ginger. The palate follows suit with jalapeños, more wet plaster, lemon curd, and old ginger. The flavor lingers and ruins your palate for an hour or so. "
