The Rhum Saint James Distillery can be found in the Saint-Marie region of the island of Martinique. The company opened a modern distillery with a museum in 2010. All of their rhums are made from the cane juice of locally-grown sugarcane harvested beginning in February into early summer. The cane juice is distilled using column-stills and for this bottling, is aged in oak barrels or vats and blended to proof with local water. Their Rhum Vieux agricole is a blend of aged three year old rums blended to 42 proof. All Rhum Saint James products have been awarded the AOC certification noting that they have met the islands high standards for agricole rhums.
Rhum Agricole VieuxRhum distilled from fresh sugarcane juice that has been aged in oak in barrels not to exceed 650 liters. In Martinique, aging requirements are at least 3 years for a VO designation, 4 years for VSOP, 6 for XO, and at least 6 for vintage rhums. Hors d'age is aged between 8-12 years.
"The dark mahogany liquid provides an aroma of vanilla, prunes, and toasted oak. On the palate the rhum reveals the sweet vanilla and prune notes found in the aroma followed by toasted almonds with a strong pop of walnuts. An intense burst of anise manifests as the rhum fades with a woody and dry finish."
