Roulaison Overproof Rum
New Orleans rum producer Roulaison Distilling launched at the end of 2016—Roulaison is the French-Creole term used for the sugarcane harvest. The distillery focuses on a pre-industrial style of rum, using pot stills and small batches.
They also use 100% Louisiana molasses. The overproof rum is fermented for between two and three weeks, and is bottled at 57.

"A pina colada type of nose with coconut and pineapple, as well as papaya and bananas, Hawaiian Punch, and cinnamon raisin bread. Smooth on the palate given it's overproof, dry but oily, with molasses, mint, and slightly pungent stewed meats. Moderately lengthy and spicy finish with overripe tropical fruits."
