County Seat Spirits was founded in 2014 and currently produces rum, vodka and gin. Spirits are distilled, diluted with "pure, reverse-osmosis water," and bottled in Allentown, Pennsylvania.
The sugarcane juice was sourced from Colombia and the rum is produced much in the same vein as a Brazilian cachaça. It is rested, not aged, before bottling.

Rhum Agricole BlancRhum distilled from fresh sugarcane juice. Has either been left alone to rest for 3 months, or if aged in oak, must not exceed 3 months in barrel. In Martinique, must be bottled between 80-110 proof.
Tasting Notes
"The slightly funky nose speaks as much of white whiskey as it does of rum--though the herbal/green aspect does suggest a cane-based product. It's cleaner and less funky on the palate, but also hot and sharp. A few drops of water brings green back to the fore. This is a unique product, even for an agricole-cachaça rum--not for everybody but worth a try."
