Solbeso Cacao Eau-de-Vie
Eau-de-Vie
Solbeso // Multiple Countries
A cacao spirit that surprisingly has little to do with chocolate. While chocolate is made from the beans inside of the cacao pod, Sobleso is made from the pulp surrounding those beans.
Inspired by all of the waste left behind in the chocolate making process, creator Thomas Higbee decided to take this “trash” and turn it into “treasure”. Made from select varieties of cacao prized for their subtlety and aromatics sourced from Peru, the Dominican Republic and Ecuador.

Tasting Notes
"There is something very familiar yet completely exotic and novel to this spirit. Clay, cocoa butter, pistachios, fresh leather, and orange extract present themselves on the nose first before grass, watermelon and beeswax make their mark. The texture is slightly waxy while the flavor is mildly sweet. Fresh mint, flowers, and licorice root and their flavors to the palate along with those cocoa butter and milk chocolate notes. In a world where so many are rehashing old ideas and repackaging them, it’s refreshing to see something novel that is fun and interesting to taste."
